Ingredients:
- Tallow or a knob of butter with a splash of high smoke point oil (like grapeseed)
- 1 large finely chopped onion
- 1 finely sliced celery stalks
- 500g organic lamb, beef or chicken mince

- Half a head of cabbage, sliced finely
- 2 crushed garlic cloves
- 1 tbsp turmeric, or 2 tbsp fresh finely chopped turmeric root
- 1 tbsp ginger, or 2 tbsp fresh finely chopped ginger root
- Optional: 2 tbsp curry powder instead of turmeric and ginger
-250ml beef, chicken, or vegetable broth, or spring or filtered water
- Sea salt to taste
Method
1. In a large, hot frying pan or pressure cooker, melt a knob of tallow or butter with a splash of high-quality oil. Sauté the onions and celery until softened.
2. Add the minced meat and stir until browned.
3. Incorporate the blended carrots, cabbage, garlic, and spices, stirring thoroughly until combined.
