easy corned beef

This easy corned beef is a classic Irish dish. The humble corned beef, or silverside as some call it, is so tender and yummy, full of goodness, and of course, delicious! 

I simply rinsed the meat, placed it in the slow cooker along with enough water to almost cover it. Add a big splash of apple cidar vinegar, a few cloves and a bay leaf. Let it cook on Low overnight or for 7-9 hours, or 4-6 hours on high. Take the tender meat out of the liquid, slice and serve with veggies (cabbage goes great and keeps with the Irish tradition)!

Ingredients

Silver side cut of beef

1-2 tablespoons of organic apple cidar vinegar

4 whole cloves

1-2 bay leaves

Method

1. Place the silver side into your slow cooker.

2. Almost cover the silver side with high quality water (spring, mineral, rain or filtered).

3. Add the apple cidar vinegar, cloves and bayleaves. 

4. Turn the slow cooker to LOW and cook for 7-9 hours (overnight works well, or for the day).

5. OR if you are pressed for time, turn the slow cooker to HIGH and cook for 4-6 hours. 

6. Take it out of the liquid, let cool, then slice and serve with lots of vegetables!
